Pan-fried cod with Wild Angelica butter

Simple Nordic fish dinner seasoned with Tarajoq Kuannit (Wild Angelica) sea salt.

Ingredients

  • 600 grams cod fillets
  • 1 teaspoons Tarajoq Kuannit (Wild Angelica) salt, for the fish
  • 60 grams butter
  • 600 grams new potatoes
  • 1 tablespoons lemon juice
  • 2 tablespoons chopped chives
  • 1 tablespoons neutral oil
  • 0.5 teaspoons Tarajoq Kuannit (Wild Angelica) salt, for the sauce

Steps

1. Boil the potatoes: Boil 600 grams new potatoes in unsalted water until tender.

2. Season the cod: Pat 600 grams cod fillets dry and sprinkle with 1 teaspoons Tarajoq Kuannit (Wild Angelica) salt, for the fish. Let it rest so the salt can settle.

3. Fry the cod: Heat 1 tablespoons neutral oil in a pan over medium-high heat. Fry the cod skin side down, then turn and finish on the other side until just cooked through.

4. Make the angelica butter: In a small pan, melt 60 grams butter over low heat. Stir in 1 tablespoons lemon juice and 0.5 teaspoons Tarajoq Kuannit (Wild Angelica) salt, for the sauce.

5. Serve: Plate the cod with the potatoes, spoon over the butter and sprinkle with 2 tablespoons chopped chives.

Notes

Tarajoq Kuannit is a seasoning. Taste before adding more salt. Works well with other fish too, such as haddock or Arctic char.
